How to make pizza & pastries on an open fire

In the world of cooking, there are few things as fascinating as the magic of an open fire. It is an element that has fascinated mankind since time immemorial, and not without reason. The heated flames, the crackling wood and the mesmerizing dance of the fire create an atmosphere that is both calming and exciting. But fire is not only an atmospheric magic, it is also a powerful tool - especially for baking.

Why choose to bake pizza and pastries over an open fire? The reasons are numerous and varied, starting with the unique flavor that only fire can provide. The flames give the pizza a smoky, savory flavor that no other baking method can replicate. This unique flavor, combined with the crispy, perfectly baked crust, makes every pizza and pastry a delicious treat. It’s no coincidence that even today, the world’s best pizza makers still bake over an open wood fire—because that’s the only way to infuse the pizza with the incomparable flavor of the fire. And even today, there are traditional bakeries in many countries that bake their handmade goods not in an electric oven, but in a real wood-fired oven—because they believe that only this way can the perfect crust with the perfect roasted flavors be achieved. But it’s not just the taste that makes baking pizza and pastries over an open fire so special. It’s also the experience itself—a blend of tradition, community, and adventure. Baking pizza around an open fire creates an atmosphere of togetherness where friends and family gather to cook, eat, and enjoy the moment together. The crackling of the fire, the laughter of the people, and the aroma of freshly baked pizza create an atmosphere that instantly makes every guest feel welcome.

So there are many reasons to bake delicious pizzas and crispy pastries over an open fire. It’s not just about the phenomenal taste—it’s also about the journey itself. And so, our Stahlkunst workshop offers the option to combine an atmospheric campfire evening with a “pizza party” using the Stahlkunst fire bowl —with the matching Stahlkunst pizza oven. The pizza oven from our workshop is specially designed to fit the fire bowl and is very easy to use—simply place the pizza oven on top of the fire bowl and light a fire underneath it. Within a few minutes, the pizza oven begins to heat up—depending on the size of the fire, the temperature reaches over 250–280 degrees after 10 minutes—and can continue to rise to as high as 350–400 degrees. This is an ideal temperature for baking pizzas or other baked goods. The pizza oven is specifically designed so that heat from below quickly enters the oven chamber through the perforated metal plate, where the oven’s domed shape ensures ideal top and bottom heat. This way, not only is the bottom of the pizza baked, but also the top—and thus the pizza toppings as well, which is very important. Other baked goods, such as bread, are baked in the same way. To gain some experience, we recommend placing your first pizza in the oven at around 250 degrees—this way, you can calmly monitor the pizza as it bakes without burning it right away.

If you've never tried a pizza cooked on an open fire, then you're in for a surprise - the delicious roasted aromas from the fiery wood fire give pizzas & pastries an incomparable taste that far surpasses that from an electric oven. A culinary highlight where the focus is not only on the destination, but also on the journey itself - because it's not just about the really great taste of the baked results, but also about sitting around the fire with family and friends, enjoying a wonderful time together, laughing and having fun while you shape the dough together, top it and finally put the ready-to-bake pizza in the oven. An atmospheric experience, with a crowning culinary finale.
